How to handle Entity Data Model changes in my web api

We have a very basic web api that has been sitting for a while with an entity data model (from an old SQL 2012 database).
We have recently moved to SQL 2014 and updated the database schema, and so our entity data model to reflect this.
We have updated our web api to reflect the changes.
How should we handle the response of our web api where different resources have different entities in their entity data model? In other words, how do we handle changing entity data models?
I do not want to create new web api controllers that will just have matching actions with the same URL, but instead want to use the same web api controller because it has many actions.

Firstly, your new API should have a List or a GetAll Method in it that matches the new endpoint. This way your old controllers will still work for now.
Now to the point of how to handle it. There are basically two ways to change the underlying data model.
Option 1: Have a copy of the model for the old data. The old and the new model should be copies of each other. The main reason is what if the old and the new schema differ. You have to have a copy of the old data with a new schema.
Option 2: Overwrite the data and the change the scheme at the same time. There is a scenario where the database model can be changed without a need to change the schema for the model. That is if the change is between the same tables. However, there are changes in schemas where the only reason to change are the mapping tables. In that case you do not want to change the data model, but just add the mapping tables.
