That is me on the left, glowing from all my hard work. The woman to the right is Beth March. We got on quite well when we worked together before she announced her pregnancy. A new chapter in our friendship happened a few months ago, when I started to write a local food column. She called me and we just sat and talked about food, and what was happening in the farming and food world. The chemistry is there, but we both need a bit of convincing and encouragement from friends to start some projects.

Last week, Beth asked if I would help her design a more exciting menu for her baking. As a gluten-free baker, she knows how hard it is to find gluten-free ingredients. She couldn’t find a suitable pasta, so we decided to do a gluten-free lasagne with a dairy-free ricotta as the binder. She made a lovely spinach pasta sauce, which matched perfectly with the romano and bocconcini.

I like baking and I like cooking, but I am not much of a chef. If I want to cook, I want to cook. I haven’t been organised at all this month and have just been piling up ingredients in my kitchen. But these photos and this recipe will help me keep my sanity.
