All the fried fish were cooked to the same level for consumer acceptability at this stage of the study, and therefore, it is expected that the CI~30~ values will be similar for all of the treatments.

The color differences ΔE, which is a measure of the color changes that occur as a result of the changes in the CI, were determined as a result of the different frying processes and treatments. The CI value of the oils was decreased (decreased yellowness and increased redness), and the color of the fish flesh was changed, as the frying time increased in all treatments. This change in color from yellow to red is one of the initial characteristics of fish muscle (omitting the initial browning phase of the frying process) and is mostly affected by the Maillard reaction ([@B15]).

The results of this study showed that the initial color of the fish flesh was slightly darker with 0.1% of BHT in the oil and it was lighter with the oil with lower concentration of this antioxidant. After 30 min of frying, there were no significant differences in the CI of oil with 0.1% BHT and 0.01% BHT. It seems that after 30 min of frying, the treatments with 0.1% BHT in the oil and 0.01% BHT in the oil have similar CI values. After 30 min of frying, as expected, the CI of the fish flesh was lower with the different treatments, except for the treatment in which 0.1% BHT was used in the oil.

The color changes from an initial lighter color to a final darker color, which was obtained with the increase in the time of frying, is more clearly seen in this graph. The rate of color change from the CI~0~ to the CI~30~ was higher in all the treatments, but the highest rate of change (from the CI~0~ to CI~30~) was observed in the oil with
